Ingredients
- 2 tablespoons Florida Orange Juice
- 1 1/2 cups low-fat (1% fat) cottage cheese
- 1/2 teaspoon fresh grated orange zest
- 1 1/2 teaspoons honey
- 1/2 teaspoon pure vanilla extract
- 1 tablespoon chia seeds
- 1 Florida Orange, segmented
- 1/2 cup fresh or thawed frozen raspberries
- 2 tablespoons chopped walnuts
- Date syrup (optional topping)
- Cacao nibs (optional topping)
Directions

In a food processor or blender, puree together the cottage cheese, Florida Orange Juice, zest, honey, and vanilla until silky smooth.
Pulse or stir in the chia seeds.
Divide the cottage cheese mixture into two bowls. Let stand 10 minutes to allow chia seeds to “gel.”
Top with the orange segments, raspberries, walnuts and, if using, a sprinkling of date syrup and/or cacao nibs. Serve.
