Heart-Healthy Chocolate Avocado Energy Bars

These no-bake bars deliver on-the-go energy to help keep you fueled throughout the day.

Ingredients

  • 1 cup pitted dates
  • 1 cup almonds, toasted, slivered
  • 1 ripe fresh avocado, pitted and peeled
  • 1/2 cup shredded coconut
  • 1/4 cup chia seeds
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup raw shelled sunflower seeds

Directions

  1. Line an 8-inch x 8-inch baking pan with foil, leaving a 2-inch overhang on the sides. Lightly coat with nonstick cooking spray.

    Process the dates, almonds, and avocado in a food processor until finely chopped and sticky. Add the coconut, chia seeds, and cocoa powder, and pulse until well combined. Transfer the mixture to a bowl and stir in the sunflower seeds.

    Press the mixture evenly into the prepared pan. Refrigerate until firm and chilled, at least 2 hours.

    Cut into 16 bars, and store in the refrigerator.
