Ingredients
- 1 cup pitted dates
- 1/4 cup honey
- 1 tablespoon chia seeds
- 1 tablespoon flax seeds
- pinch of salt
- 1 1/2 cups rolled oats
- 1 cup unsalted pistachios, chopped
- 1 cup dried cranberries
- 1/4 cup white chocolate chips (optional)

Add the dates, honey, chia seeds, flax seeds, and salt to a food processor. Pulse until the mixture is well blended and sticky. If needed, add a small amount of honey to help it come together.
Transfer the mixture to a large bowl. Stir in the oats, pistachios, cranberries, and white chocolate chips, if using, until evenly combined.
Chill the mixture briefly to make it easier to work with, then scoop and roll into approximately 1-inch balls.
Store covered in the refrigerator for up to 2 weeks.
