No-Bake Cranberry Pistachio Energy Bites

A festive, no-bake snack that’s especially perfect for the holiday season or winter gatherings. These bites have that cozy sweet-and-salty combo, with chewy cranberries and a touch of white chocolate that makes them feel a little extra special—great for sharing at parties, gifting, or keeping on hand during busy days.

They’re not only delicious, but also nourishing, with whole grain carbs from oats, healthy fats from pistachios and seeds, and a bit of fiber to help support steadier energy. And the best part? No oven required—making them an easy, low-lift option when you want something homemade without the fuss.

For a spring or summer twist, this recipe easily transforms into a lighter, more refreshing version. Simply omit the dried cranberries and white chocolate chips, and add 2 tablespoons fresh lemon juice + 1 teaspoon lemon zest to the base mixture.

They come out bright, vibrant, and slightly tangy—perfect for warmer days when you want something that feels a little lighter (and less sweet-forward). The pistachio and lemon combo really shines here!

Ingredients

  • 1 cup pitted dates
  • 1/4 cup honey
  • 1 tablespoon chia seeds
  • 1 tablespoon flax seeds
  • pinch of salt
  • 1 1/2 cups rolled oats
  • 1 cup unsalted pistachios, chopped
  • 1 cup dried cranberries
  • 1/4 cup white chocolate chips (optional)

Directions

  1. Add the dates, honey, chia seeds, flax seeds, and salt to a food processor. Pulse until the mixture is well blended and sticky. If needed, add a small amount of honey to help it come together.

    Transfer the mixture to a large bowl. Stir in the oats, pistachios, cranberries, and white chocolate chips, if using, until evenly combined.

    Chill the mixture briefly to make it easier to work with, then scoop and roll into approximately 1-inch balls.

    Store covered in the refrigerator for up to 2 weeks.
