Pistachio Matcha “Nice” Cream

Ingredients

  • 3 large ripe bananas, peeled, sliced into 1-inch pieces, and frozenĀ 
  • 1/4 cup raw unsalted pistachios
  • 1 tablespoon culinary matcha green tea powder

Directions

  1. Remove the sliced frozen bananas from the freezer and let stand for 3 minutes to slightly thaw. Add the bananas, 3 tablespoons pistachios, and matcha powder to the bowl of a food processor and blend until the texture resembles creamy soft serve ice cream, scraping down the insides of the bowl as needed.

    Serve immediately or place in the freezer to firm up slightly for several minutes. Chop remaining pistachios and sprinkle on top before serving.

    (Hint: The soft serve can be frozen and then re-processed for the same texture. Keeps well in the freezer for up to 1 month.)
