🍋 Rub cut side of the avocado with lemon or lime juice⁠ - The citric acid in lemon and lime juice helps to slow the browning process.⁠
🥑 Place in the refrigerator - When nearly ripe, store your cut avocado in the fridge to keep it fresh for up to three days.⁠
🧻 Wrap tightly with plastic wrap⁠ - Much like oil, plastic wrap creates a barrier, preventing oxygen from reaching the surface and oxidizing.⁠

It's a hot one 🔥 out there & there's no better way to cool down and ⁠refresh than with this 🍉 Watermelon 🥒 Cucumber Juice from my book "From Burnout to Balance.”

Here's how to make it:⁠
8 cups large watermelon cubes (21⁄2 pounds)⁠
1 cup thick slices unpeeled English cucumber, plus 4 thin slices for garnish⁠
Juice of 1 lime (about 2 tablespoons)⁠
1⁄4 teaspoon sea salt⁠
supercharger - 12 fresh mint leaves (optional)⁠
⁠.
In a high-powered blender, combine the watermelon, thick cucumber slices, lime juice, salt, and mint leaves (if using), and blend on high until smooth, about 1 minute. Strain through a fine-mesh strainer and reserve the pulp for use in another recipe. Pour into glasses, garnish with the thin cucumber slices, and serve. ⁠

What's your favorite summer fruit? 🍉⁠

I've had the MOST amazing peaches lately. 🤩 When they are in season they are something truly spectacular & I love grilling them 🔥 especially in this Grilled Peach and Watermelon Salad⁠ 🍑 🍉 🥗 ⁠
⁠.⁠
Here's how to make it:⁠
Dressing:⁠
1 tablespoons balsamic vinegar⁠
1 teaspoon honey⁠
3 tablespoons extra-virgin olive oil⁠
½ teaspoon chili pepper flakes⁠
¼ teaspoon sea salt⁠
Salad:⁠
2 peaches, pitted, halved and sliced into 1-inch quartered wedges⁠
1/2 small watermelon (about 2-3 cups), rind removed and sliced into wedges⁠
4 cups arugula⁠
1/2 cup blackberries⁠
2 ounces semi-hard Sheep or Goat Milk Cheese, shaved⁠
1/4 cup pistachios, roughly chopped⁠
⁠.⁠
In a small bowl, whisk to combine all the ingredients for the dressing and set aside. Grill the watermelon and peach wedges at 450°F until the fruit has cooked through and grill marks have occurred on both sides. To serve, toss the arugula in a medium bowl with half of the dressing. Transfer the dressed greens on a serving platter or plates. Arrange the grilled fruit and blackberries over the top of the greens, top with the shaved cheese, the remaining dressing, and scatter with pistachios.⁠

Here's how to make this super comforting & equally as nourishing Shaved Asparagus & Potato Frittata from my latest book, "From Burnout to Balance"
.
1⁄2 pound asparagus stalks, untrimmed
10 large eggs
1⁄4 cup 2% fat milk or plant-based milk
3⁄4 teaspoon sea salt, divided
1⁄2 teaspoon freshly ground black pepper, divided
2 ounces Manchego cheese, grated or finely crumbled
2 tablespoons extra-virgin olive oil
3 scallions, thinly sliced on a diagonal, green and white parts separated
2 medium Yukon Gold potatoes, unpeeled, sliced into extra-thin rounds
superchargers 2 cups packed fresh baby arugula
 1 small lemon, cut into wedges

Lay a single stalk of asparagus on a cutting board. Holding on to the tougher end, use a vegetable peeler to shave the asparagus spear into thin ribbons, peeling away from the tougher end. Trim the tough end and compost (or discard) any remaining woody portion. Repeat with the remaining stalks. Preheat oven to 375°F. Whisk the eggs, milk, 1⁄4 teaspoon of salt, and 1⁄4 teaspoon of pepper in a large bowl until well combined. Stir in asparagus and Manchego and set aside. Heat a 10-inch cast-iron skillet over medium heat. Once hot, add olive oil and swish around so it travels up the sides of the pan. Stir in the white parts of the scallions. Then, evenly arrange the potatoes in a couple of layers in overlapping style. Sprinkle with the green parts of the scallions and the remaining salt and pepper, and cook for 2 minutes. Add the egg mixture to the skillet. Cook on the stovetop until the edges of the frittata are just set, about 5 minutes. Transfer to the oven to continue cooking until the top is golden brown and the center is fully set, about 35 minutes. Let cool for at least 5 minutes to complete the cooking process. Cut into 6 wedges. Top each wedge with fresh baby arugula and a squeeze of lemon, if desired.
