What's your favorite summer salad? 🥗 ⁠

For me, it's not quite summer without potato salad! 🥔 I love putting a spin of the classic BBQ staple with this Warm Potato Leek Salad with Citrus & Herbs 🌿 ⁠
.⁠
Here's what you'll need:⁠
SALAD⁠
2 ½ pounds multi-colored fingerling potatoes, rinsed and sliced lengthwise⁠
1 large leek, (white part) halved lengthwise and sliced⁠
2 teaspoons extra virgin olive oil⁠
½ cup black or green lentils, dry⁠
DRESSING⁠
¼ cup extra virgin olive oil⁠
Zest of 1 orange⁠
3 tablespoons orange juice⁠
2 teaspoons apple cider vinegar⁠
1 teaspoon honey⁠
½ teaspoon Dijon mustard⁠
½ teaspoon salt⁠
½ teaspoon black pepper⁠
2 tablespoons Parmesan cheese, finely grated⁠
GARNISH⁠
½ bunch fresh chives, finely chopped⁠
½ bunch fresh parsley, roughly chopped⁠

1 tablespoon extra virgin olive oil
1/4 teaspoon sea salt⁠
1 (14-ounce) package prepared 100% whole wheat pizza dough ⁠
2 cups frozen corn
2 cups cherry tomatoes⁠
4 garlic cloves, thinly sliced⁠
1/4 cup red onion, thinly sliced⁠
1 cooked chicken breast, sliced crosswise (optional)⁠
1/4 teaspoon sea salt⁠
1/2 teaspoon freshly ground black pepper⁠
1 cup baby spinach⁠
2 ounces feta cheese, crumbled⁠
1 tablespoon extra virgin olive oil (for drizzling)⁠
